Rob Magargal - who I beleive is one of the craftsmen at the Taylor Guitar workshops, has a finely honed re-stringing technique with cunning use of an adaptor for a power screwdriver that fits over tuning pegs.
Obviously, years of practice are going to help here - I can just imagine a terrible accident with a mains powered drill with way too much torque - so please dont try this at home unless you are truly competent.
But 2:08 is a rocking time to beat for changing an entire set of strings.
